NO-COOK TOMATO SAUCE

INGREDIENTS
- 2 large ripe tomatoes, washed and dried
- Salt and pepper, to taste
- 1 to 2 tablespoons extra-virgin olive oil
- 1 garlic clove, minced
- ¼ cup fresh basil, chopped, plus more for garnish
DIRECTIONS
- Cut each tomato in half.
- Using a box grater placed over a bowl, place the tomatoes, cut-side down, over the large holes of the grater. Grate each tomato until only the skin is left. Discard the skins and remove the grater from the bowl.
