Ingredients:
- 5-6 cups washed and dried arugula
- 2 grapefruits
- 1 avocado
- ½ cup raw walnuts, chopped
- 1 tsp lemon juice
- 1 tsp raw honey
- 1 tsp apple cider vinegar
- 2 tsp unrefined flax oil
- 2 tsp extra virgin olive oil
- 1 garlic clove, crushed or minced
- sea salt and freshly ground pepper
Preparation:
- Peel one of the grapefruits and separate the slices. Remove the skin with a sharp knife. Cut the other grapefruit in half and squeeze the juice into a small container with a lid. Cut the avocado in half and cut it into thin slices.
- Put the salad ingredients into two plates: arugula, avocado, grapefruit slices and walnuts.
- Prepare the vinaigrette: combine the lemon juice, honey, flax oil, vinegar, olive oil and garlic with the grapefruit juice. Cover, and shake energetically. Season with salt and pepper.
- Pour the dressing over the salads. It is ready for serving.
