Ingredients:

  • 30 g of dry white wine
  • 10 cloves of fresh garlic
  • 250 g of locally grown honey
  • 15 g of extra virgin olive oil
  • Sprinkle of sea salt
  • Cracked white pepper corns
  • 1 sprig of fresh rosemary

Instructions:

The first step is preheating the oven to 200 degrees. Peel the garlic cloves, and stir the olive oil and the white wine using a whisk. Place the garlic on a baking paper and place it using a ceramic oven dish.

Then, pour the mixture of olive oil and white wine over the garlic. Sprinkle with sea salt and top it off with rosemary sprigs.  Close the baking paper into a package and put the dish in the oven.

The garlic should be roasted for about 15-50 minutes, or until the smell permeates the kitchen and the cloves get golden color. Remove the garlic from the baking paper and smash it with a fork.

Extract the remains of white wine and olive oil juices as well. Stir the roasted garlic into the honey, and put some cracked white pepper. When done, put the resulting mixture in a jar. The infused jar is supposed to last for at least two months.

Ingredients:

  • 8-10 cloves of minced garlic
  • ½ pint raw honey

Instructions:

This procedure is extremely easy. Put the minced garlic in the bottom of a half-pint jar, and fill the rest with honey. The jar should be placed near a south-facing window. During the next month you will be able to see garlic juice releasing into the honey. It is ready to use after a month.
